A Taproom That Moved at the Opposite Speed

Contrast that with We The People Taproom, which opened at 165 E Quail Run Rd in Rockwall on a completely different timeline. The concept had a soft opening in early February 2026, followed by a formal grand opening celebration on March 5 from 4 to 9 p.m. The menu leans into regional American street food, Nashville Hot Chicken Sandwich, Philly Cheesesteak Eggrolls, Chicago Hanger Steak Frites, paired with a self-pour tap wall where guests control their own beer, wine, and cocktail pours by the ounce.

Two months after that grand opening, the taproom was already adjusting to how locals were actually using the space. On May 7, 2026, ownership announced a new daily Snack Hour and an extended Happy Hour, explicitly framed around what regulars were asking for rather than a standard industry playbook. That is a business finding its rhythm in a season, not a multi-year public works timeline. Both openings are real. They just moved at entirely different speeds, and knowing which kind of project you are dealing with tells you how much patience to bring.

What's Still Worth the Wait

Two projects deserve patience rather than a Saturday drive-by. 1880 Kitchen, named for the year Heath was established, is planned as a 5,500 square foot restaurant with an outdoor patio along the trail connecting FM 740 to Chris Cuny Boulevard in The Reserve. It comes from Heath resident Agon Dika, who also owns Giovanni's at The Harbor in Rockwall, and it was approved by City Council back in January 2025. A year and a half later, there is still no public opening date, which is normal for a ground-up commercial build but worth knowing before you go looking for it.

HG Sply Co's rooftop is the more deliberate delay. The land at 2651 Sunset Ridge Dr has been owned by the concept's parent company, UNCO, since 2016, but the rooftop was intentionally held back until the surrounding development finished, specifically to protect its view of Lake Ray Hubbard. That patience is now pointing toward a Q4 2026 opening.

None of this is a complaint about Heath or Rockwall moving too slowly.
